Vegan Receipe -` Spice Up Your Life`- Crispy Sweetcorn, Red Pepper & Jalapeno Corn Flour Vegetable Burgers


Delicious crispy vegetable burgers shown here with a fresh salad of cucumber ribbons and cucumber cubes.


This gorgeous plate of food can be eaten for lunch or dinner!


The flavours of the sweetcorn, onion and jalapeno peppers go really well together, a marriage made in heaven!


A tomato sauce would have also really complimented this meal well but I had run out of tomatoes!

To make the crispy vegetable burgers


You will need:

  • Sweetcorn x1 small can
  • Jalapeno pepper x1
  • Red bell pepper x1 small
  • Yellow corn flour (Juana brand, Maiz Cascado)
  • Black pepper
  • Pink salt or sea salt



Chop up the red bell pepper, white onion and jalapenos and add to a mixing bowl with  the sweetcorn. Just look at those fresh vibrant colours!


Next add in the yellow corn flour, salt, black pepper and water and mix the ingredients together to distribute the seasonings.


Add water gradually to form the dough. 


Once you have the desired consistency form them into a patty using the palm of your hands and should look like the ones below. They are then ready to be shallowed fried in a little oil on both sides until golden brown and crispy.

Vegan Receipe - 'Sweet On You' - Salad Featuring Plantain, Sweetcorn & Tomango Sauce


A filling tasty salad consisting of lettuce, sweetcorn, scoops of avocado, cucumber slices, sauteed carrot and red cabbage with spicy tomato sauce topped with baked plantain.



A beautiful combination of textures and flavours - crisp fresh lettuce, crunchy sweetcorn, creamy avocado, firm hydrating cucumbers, savoury sauteed red cabbage and carrots, fiery tomato, mango and habernero sauce and sweet baked plantain.


Under the plantain and sauce is the sauteed red cabbage and carrot.




An exciting and vibrant salad thats packed full vitamins and minerals!


All you have to decide is whether to make this for your lunch or for your dinner!


To make the sauce you will need:
○Tomatoes x4
○Mango x1
○Habernero pepper x1 
○Pink Salt

Vegan Receipe ' - Almost Hummus' Salad - Oil Free



This fresh sexy salad seriously kicks ass! Yes you read that right....'sexy' salad.

I couldn't find any tahini local to where I was staying in San Jose so I made 'Almost Beetroot Hummus' and it was still delicious and I still felt like I was eating hummus.

The salad is made up of:

○Chopped tomatoes
○Chopped onions
○Lettuce
○Avocado x1 small 
○Chickpeas for decoration
○'Almost Beetroot Hummus' - see receipe below



To make 'AlmostBeetroot Hummus' you will need:

○Chickpeas x1 can
○Beetroot x1 small
○Carrot x1 small
○Garlic x4 cloves
○Pink Salt


Blend ingredients till smooth.

Vegan Receipe - 'Naughty but Nice' - Raw Chayote Salad with Black Refried Beans




I am high raw and eat approx 85%-90%raw the majority of the time. 


Sometimes this can drop down to 50/50 but even at 50/50 I still reap the many health benefits I didn't have when I was eating 100% cooked vegan meals.


This chayote salad features some processed food in the form of black refried beans.
The salad is made up of:

○Chayote

○Lettuce
○Papaya Seeds
○Black Refried Beans 










Initially I only filled the pepper with the refried beans but the refried beans tasted so good so I added more to the salad!


And voila...a simple tasty filling salad with some naughtiness!



The raw vegerables has a cleansing effect to the effects of the refried beans so I didn't get as much of the tired feeling that I would have got if I had eaten it with rice or other grains.
