Raw Vegan Breakfast - 'Mangolicious' - Overnight Oats W Mango Chunks


A variation on my 'Fruity Date' Overnight Oats.

For this overnight oats bowl I blended x6 dates with water and poured the mixture over the dry oats and stirred through. 

The oats where then placed in the fridge over night and then in the morning I stirred the oats which were nice and creamy and then added some freshly chopped mango chunks.

An easy, delicious filling breakfast! Packed full of nutrients, the perfect way to start your day.

Raw Vegan Breakfast - 'Pining' - Pineapple & Papaya Overnight Oats


This is a variation on my 'Fruity Date' overnight oats. 

For this overnight bowl I blended fresh pineapple chunks with a little water and poured the whole mixture (including pulp) onto the oats and stirred through. 

The next morning I added some fresh pineapple chunks and topped with some freshly chopped papaya.

 I judged the amount of freshly blended pineapple to add by how easy it was to mix as I am an eyeballing kind of girl.

 It was easy to mix but not too easy, the most common ratio is 1 cup of water to 1 cup of oats ratio.

I love how quick and easy this breakfast was to prepare. Such a filling, super tasty, raw and nutrious breakfast, a great way to start the day!

Vegan Receipe - 'Mashed' - Yellow Cornflour 'Chickn' W Mashed Avocado & Tomato Sauce







This is a receipe for a quick simple and tasty vegan 'chicken' made from yellow cornflour. Crispy `chicken`like taste and texture with the added benefit of bieing gluten free!


In this picture I topped the 'chicken' patties with mashed avocado, chopped tomatoes and onions and served with a side salad of tomato, lettuce and onion salad with a yummy tomato, chill and date sauce.

This is really is such as delicious combination!

I tend to make my food by eyeballing the ingredients so adjust ingredients according to taste.

○Yellow corn flour x1 cup (Juana Brand, Maiz Coscado)
○Pink Rock Salt
○Black Pepper






To make the yellow corn flour vegan chicken...Pour yellow corn flour into a mixing bowl.



Grind in some pink sea salt.





Grind in some black pepper.





Pour in some water little by little and form a dough. You can always add more water or cornflour if initially it's too wet or too dry.



 


You want a firm but moist dough. Once you have the desired texture you can then split into sections and roll into a ball with your hands.

 



Place the balls on a plastic surface (like a freezer bag) and squish with your the palm of your hands then peel off. You want rough shapes and if they come out uneven this actually helps them to look more like chicken when they fry!





Heat up some oil and fry the patties on each side until they are a light golden brown.




For the sauce you will need:

○Tomatoes x2
○Dates x6
○Chilli x1
○Pinch of pink salt

Vegan Receipe - 'Fruity Date' - Overnight Oats wirh Dried Fruit & Nuts



This was first attempt at overnight oats and I was blown away by the result!

I'll be honest and say that overnight oats never appealed to me before but lately it's been calling me to try them and I am so glad I did!

For this overnight oats I blended x6 soft pitted dates with water and poured the mixture over some dried oats and stirred through. I used this in place of plant based milk as I don't drink tea or coffee which means I never buy plant based milks.

My current way of eating and the receipes that I tend to create don't require plant based milks. You can of course use plant based milks if you prefer. 

What I love about dates is that they are such a good natural sweetner on their own!

 I judge the liquid content by how easy it was to mix as I am an eyeballing kind of girl. Most people use 1 cup of water to 1 cup of oats ratio.

 It was easy to stir but not too easy, a nice thick mixture. I then put the mixture in the fridge overnight to do its thing. In the morning I stirred again and added some dried fruit and nut mix and voila! A truly delicious combination! 

I love how quick and easy this breakfast was to prepare. Such a filling, super tasty, raw and nutrious breakfast, a great way to start the day!

Vegan Receipe - 'Tropica' - Papaya & Bananas Smoothie Bowl - Just 3 Ingredients!





This is my go to fuss free super simple smoothie bowl.

I'm currently in Costa Rica and the bananas and papayas here taste out of this world. So much flavour than the ones available in the UK!

For this smoothie bowl I simply blended x4 medium sized bananas with x1 medium sized papaya and some ginger. I only added a little water as I wanted it thicker so that it's more of a dessert consistency.

A truly delicious sweet and filling smoothie bowl which keeps me going till lunch!

Vegan Receipe - 'Chicken-ish' - Gluten Free Vegan 'Chicken' - Just 3 Ingredients! - Chicken Alternative








This is a receipe for a quick simple and tasty vegan 'chicken' made from yellow cornflour.

They can be eaten either sweet or savoury. I n this case I made the vegan chicken itself savoury and served one portion with side salad and the other was topped with bananas which was a nice combination of sweet and savoury!

I tend to make my food by eyeballing the ingredients so these are not official measurements! Adjust ingredients according to taste.

○Yellow Cornflour (Juana Brand, Maiz Cascado)
○Pink Rock Salt
○Black Pepper

These vegan 'chicken' burgers are very filling and satisfying and also extremely versatile.
