Vegan Receipe - 'Purple Mosaic'' - Purple Cabbage Pancake Patties


This is a receipe for gluten free red cabbage veggie burgers/fritters/patties made from yellow corn flour. 




Here they are served with a salad of fresh tomatoes, coriander, onion, lettuce and red cabbage with a beetroot sauce/dressing.


This receipe was inspired by the many mosaic murals dotted around San Jose in Costa Rica!



This delicious vegan meal is ideal for lunch or dinner, its super tasting and filling without making you feel heavy!



To make the sauce you will need:
  • Beetroot x1 small
  • Tomatoes x3 small
  • Garlic x5 cloves
  • Carrot x1 small
  • Pink Salt


Pulse then blend until all the vegetables have completely broken down, it will have a nice texture as seen in the pictures above.

To make the veggie burgers/fritters

I tend to make my food by eyeballing the ingredients so adjust ingredients according to taste.

○Yellow corn flour x1 cup (Juana Brand, Maiz Coscado)
○Pink Rock Salt
○Black Pepper 






To make the yellow corn flour vegetable patties.

Pour yellow corn flour into a mixing bowl.



Grind in some pink sea salt.





Grind in some black pepper.





Pour in some water little by little and form a dough. 




 
You then need to add in some chopped cabbage. i forgot to take the picture of what it looked like while I was mixing the cabbage in with the flour.


However you can see what they looked like before I fried them further below.

When mixing the flour you can always add more water or corn flour if initially it's too wet or too dry. 


You want a firm but moist dough. Once you have the desired texture you can then split into sections and roll into a ball with your hands.

 

Place the balls on a plastic surface (like a freezer bag) and squish with your the palm of your hands then peel off and theh should look like the picture below.



Heat up some oil and fry the patties on each side until they are a light golden brown and serve with a fresh salad like the one below. 

Alternatively you could serve them with roast or sauteed vegetables but as I´m high raw I like to have at least 50% of the majority of my food uncooked.

Vegan Receipe ' - Almost Hummus' Salad - Oil Free



This fresh sexy salad seriously kicks ass! Yes you read that right....'sexy' salad.

I couldn't find any tahini local to where I was staying in San Jose so I made 'Almost Beetroot Hummus' and it was still delicious and I still felt like I was eating hummus.

The salad is made up of:

○Chopped tomatoes
○Chopped onions
○Lettuce
○Avocado x1 small 
○Chickpeas for decoration
○'Almost Beetroot Hummus' - see receipe below



To make 'AlmostBeetroot Hummus' you will need:

○Chickpeas x1 can
○Beetroot x1 small
○Carrot x1 small
○Garlic x4 cloves
○Pink Salt


Blend ingredients till smooth.

Vegan Receipe - 'Great Balls of Fire' - Yellow Corn Flour Meatless Meatballs' in Tomato Sauce



A delicious hearty and satisfying vegan version of meatballs. I served this on a bed of fresh lettuce for a quick simple meal.



Below you can see the demolition in progress!


To make the tomato sauce you will need :

○Tomatoes - x10 medium
○Onion - x1 small
○Garlic - x1 whole
○Drier Oregano - 1 TSPS
○Black Pepper - 1 TSPS


It's not necessary to use oil for this dish. 

Sautee onions, tomato and garlic together in a pan. Grind in some pink rock salt  and black pepper. Finally add some dried or fresh oregano and as an option you can add some agave syrup.

Leave to simmer for approx 40 minutes.

To create this delicious feast I used my favourite Juana gluten free yellow corn flour, it's such an amazing versatile flour!

To make the meatless 'meatball' dumplings you will need:


○Yellow Corn Flour x1 large cup ( Juana Brand, Maiz Cascado)
○Grated Carrots
○Chopped Onion
○Coriander
○Pink Salt
○Black Pepper


Pour yellow corn flour into a mixing bowl.


Grind in some pink sea salt.





Grind in some black pepper.




Then thrown in the coriander and grated carrot.


Add water and mix to form a dough which firm but moist.



Split the dough and roll between your hands into smaller balls.


Place the balls into boiling hot water for approx 10 minutes until they are cooked. They will swell in size and look like the ones below. The texture will nice and firm.



Once cooked place them in the tomato sauce for another 10 minutes on a low heat.


This will allow the corn flour balls to absorb some of  the flavour from the sauce.


After appox 10 minutes they are now ready to eat, serve on a bed of lettuce and tuck in! 

Alternatively you can serve with healthy pasta like spelt pasta/spaghetti.

Vegan Receipe - 'Av it!' - Gluten Free Pizza W Raw Avocado & Onion Topping


This is a receipe for  a gluten free delicious filling vegan pizza. It features a yellow corn flour base with a sauteed tomato and garlic sauce, topped with raw ingredients of white onion, coriander and scoops of fresh creamy avocado.


The step by step process below makes x1 personal size pizza.



I tend to make my food by eyeballing the ingredients so adjust ingredients according to taste.

○Yellow corn flour x1 cup (Juana Brand, Maiz Coscado)
○Pink Rock Salt
○Black Pepper 






To make the yellow corn flour base pizza

Pour yellow corn flour into a mixing bowl.



Grind in some pink sea salt.




Grind in some black pepper.





Pour in some water little by little and form a dough. You can always add more water or corn flour if initially it's too wet or too dry.



 

You want a firm but moist dough. Once you have the desired texture you can then roll into a ball with your hands.



 


Place the balls on a plastic surface (like a large freezer bag/clean plastic bag) and squish with your the palm of your hands. Next use the pads of your fingers to flatten out into a circular shape. Your aim is to gently flatten the dough outwards towards the edges



 Form ridges around the edges to form a middle section for the sauce.


Close up of the pizza base which is now ready to bake in the oven. Bake at 200c for approximately until light golden brown. 


The base is ready when it looks like the one below. It will have a light golden colour and be firm and crispy on the surface. The nature of corn flour is that it will crack in places but still hold frm. I quite like the cracks as it gives the pizza an artisan feel!

To make the tomato sauce I sauteed x2 and 1/2 large tomatoes with some roughly chopped garlic and added pink salt to season. You can add extra herbs like oregano if you wish but for this pizza I opted to just make a basic tomato and garlic sauce. 

Once the sauce is done let it cool a little then spoon into the middle of the crust.


Next top with slices of raw onion.


Next throw on some fresh coriander leaves.


Finally scoop out x1 large avocado and place on top and voila your personal gluten free pizza is ready eat!
