Vegan Receipe - Tacos W Leftover Red Cabbage & Sweetcorn

What do you do when all you have in the fridge is leftover beetroot sauce, sweetcorn, red cabbage, lettuce and tortillas?

You make combine the all the ingredients for a unique Taco filling!

The ellow corn tortillas gently heated on an open flame and folded over, ready for the filling of lettuce and sauteed cabbage and sweetcorn.



I sauteed the leftover red cabbage and sweetcorn with the beetroot sauce and the result is this amazing rich vibrant mix. The leftover sauce was made up of beetroot, tomato, garlic, carrot and pink salt.



Fresh crisp lettuce really complments the mixture.


You really can´t go wrong with sweetcorn and red cabbage combo!


This meal can be either a lunch or dinner. No picture of the tacos filled as I forgot in my eagerness to eat them!

To make the sauce that the red cabbage and sweetcorn were sauteed in you will need:

  • Tomatoes x4 large
  • Beetroot x1 small
  • Carrot x1 small
  • Garlic x4-6 cloves
  • Pink Salt

Vegan Receipe - Vegan Yellow Corn Tacos





Easy vegan tacos for a quick, light but filling lunch. This a part raw part processed lunch,  the tortillss were store bought but all the filings are fresh and raw.

You will need x4-6 yellow corn tortillas depending on how hungry you are. I used the brand below.


I used x2 small avocados as the spread.


For the filling I used sweetcorn, grated carrots, chopped tomatoes and chopped onions.


For the sauce I blended tomatoes, dates, coriander, garlic and sea salt.


Once filled fold over and enjoy!

Vegan Receipe - 'Ripe N Ready' - Raw Ripe Plantain & Avocado Salad


In a previous post I showed a simple combo of raw plantains with sliced habernero peppers and sea vegetable seasoning.

That was first time eating raw plantain and I liked it so much that I thought I would have it again!




Thus time I added my beloved avocados and some coriander as well the same sea vegetable seasoning and habernero peppers again.












SALAD INGREDIENTS

○Ripe Plantains x2
○Avocados x2 small
○Habernero peppers x6
○Ginger
○Coriander 
○Algamar Sea Vegetable Seasoning 



This time the spiciness is not as obvious due to the creaminess of the avocados and yummy coriander flavour.





A delicious and nutrious filling lunch!

Vegan Receipe - 'Feeling Hot Hot Hot!' - Spicy Raw Ripe Plantains


Did you know that ripe plantains can be eaten Raw? 

Ripe plantains are yellow with black marks...the darker the plantain the riper and softer and sweeter they are.





Well if you didn't know then welcome to the club! I only found out shortly after I went raw in July 2017. I was inspired to try them raw by Jack Albrittons video on eating raw plantains and also the video by Sweet Tropical Living.





I absolutely love cooked plantains, prefably fried instead of boiled so I thought I'd try them raw.


Spicy food is a must for me so I thought I would pair raw chopped plantain with chopped habernero peppers and some sea vegetable seasoning I had left.




Raw plantains are delicious! They taste like savoury bananas and the peppers complimented them really well.
